Start your day with a bang! These Eggs are packed with flavor fluffy eggs crispy bacon and a kick from our Green Amazon and Habanero Salsa. Top with fresh cilantro, red onion, and a squeeze of lime. Perfect for breakfast or anytime you crave a delicious, spicy meal!
Instructions
- Slice the red onion and finely chop chives and cilantro. Set aside.
- In a skillet over medium-high heat, cook the bacon strips until golden and crisp, approximately 5 to 6 minutes. Once cooked, place them on a plate lined with paper towels to drain any excess oil
- In another saucepan over medium-high heat, toast the tortillas for 1-2 minutes. Tip: Place them inside a cloth to keep them warm.
- In the same saucepan, heat oil over medium-high heat and add the eggs. Cook them for 3 to 4 minutes, then season with salt and pepper to taste.
- To serve, place tortillas on a plate and top with the bacon. Drizzle with Habanero and Green sauces. Add the red onion, chopped chives and feta cheese on top. Squeeze fresh lemon juice over the dish and garnish with chopped cilantro.
